Improve spatial mapping during exhibition

Hi
We've made a collaborative application in hololens. It performs well in our office, but when we are doing exhibitions spatial mapping becomes confused, probably because of the many people standing around the scene

We are looking for a way to improve this. Currently we have one world anchor. Could we improve localization by adding more anchors?
I'm also thinking of using spatial understanding to locate where the scene is (above a table for example) and where the floor is. Could it be possible to ignore the people when they are over the floor?
Well, that's where we are right now so if anybody has met this problem I'll be very interested of the way they have handle it.
