I see many projects out there using mapping components. PGA's they just showed at WPC, taqtile had another at build that showed 3D Map of a city with Holograms on it, and I believe there was another at build using 3D maps and flight data.
What are some best practices, tools, etc. to bring 3D maps like bing maps into Holographic apps?

We ended up taking a screenshot of an online mapping program and overlaying some holograms on it. Worked and looked great.
We looked into several assets on the unity store as well, all looked very promising but they were more necessary when your use case is dynamic. Our landscape and geography we were trying to show was static, screenshot on a plane worked great.

I am interested in any solutions you may have come up with.

We just pulled 3d data directly in from bing, and other sources. Of course it was cached on our own map server, but there was some work involved getting it to display properly with good performance.

We are looking to do something similar and are very new to Hololens and Bing (but not to Unity) - can you give some pointers on where to start looking if we want to grab Bing 3D data?
Also, I assume that when you say 3D data you mean terrain data and not 3D buildings, correct?

@nash possibly your are looking for the Windows 10 UWP (C#) version with access to Aerial 3D imagery. Seems to be XAML controls though.

Did you get the solution about displaying the world 3D map like Holomap?
Could you please share your findings or any solution?
Thanks,
